HACO is led by Kensuke Yada, Executive Chef of HACO. With over a decade of experience in Sydney’s fine dining scene and training rooted in Japan’s most respected washoku traditions, Chef Yada brings a focused and contemporary approach to Japanese cuisine.
By fusing charcoal grilling with the delicacy of tempura, HACO presents a truly one-of-a-kind omakase a style that cannot be found elsewhere. From the counter, guests witness precise, quiet craftsmanship as seasonal ingredients unfold in a carefully curated progression.
